1 pkg Package Stonefire Tandoori Naan, Garlic Variety 1 15 oz can of Chickpeas, drained and rinsed ½ cup hummus, homemade or store bought 2 tbsp red onion, finely chopped ½ tsp ground cumin 1 clove fresh garlic, finely chopped 1 tbsp fresh parsley, finely chopped ¼ tsp dried chili flakes (add to taste) 1 cup washed baby spinach 8 pieces thinly sliced cucumber 6 pieces thinly sliced tomato salt and freshly ground pepper Directions In a medium bowl, mash chickpeas with a potato masher or the back of a fork, combine with the onions, cumin, garlic, parsley, chili flakes, salt, pepper, and hummus. Set aside. Mist and heat two Naan according to package instructions. Place the baby spinach, sliced cucumber, and tomato on the bottom (flat side) of both warm Naan. Top with the spicy Chickpea mixture (try to keep ingredients away from the edges of the naan for easier roll-up). Roll up naan and secure with toothpicks, if necessary, to hold together. Cut each roll-up in half. Serve immediately.
